🌮 Enchilada Casserole 🎉 This is like a mexican lasagna and is a filling, easy to put together casserole that is incredibly affordable too! Serve it with some nice crisp lettuce, salsa or pico, sour cream, or avocado/guacamole. Adding a side of rice and beans would be an amazing complete meal! 

What’s awesome about this recipe is you can switch out the beef for some shredded rotisserie chicken and the red enchilada sauce for green and you’ve got yourself a fabulous chicken verde version that is just as good! ❤️ Enjoy!

Ingredients

Instructions

  1. Preheat oven to 350
  2. Brown meat with seasonings, green chiles, add olives including juice and simmer.
  3. mix in corn till heated through
  4. butter casserole dish bottom and sides
  5. cut corn tortillas in quarters
  6. layer bottom and sides with tortilla pieces
  7. pour half meat mixture
  8. cover with shredded cheese
  9. layer again with tortilla pieces
  10. remaining meat mixture
  11. cover with shredded cheese
  12. top with final layer of tortilla pieces
  13. pour entire can of red enchilada sauce all over top
  14. cover with foil and bake for 30 minutes
  15. remove cover, sprinkle with cheese and bake 10 minutes more uncovered.
  16. let cool and slice into squares, serve with diced tomato, lettuce, sour cream, and avocado
