Filet Mignon and Roasted Asparagus

🥩  Filet Mignon & Asparagus. Everyone should know how to cook the perfect steak at home.  Simple, surprisingly fast dinner that feels bougie & gourmet.  Find grass fed filet at your butcher if possible. Just a few ingredients & you will rival any overpriced steak house.

🧂 Ingredients:

  • 4 Filet Mignon (6-12 oz ea.)
  • 3 Tbsp Olive Oil
  • 4 Tbsp Butter
  • Garlic salt
  • Onion powder
  • Black Pepper, fresh cracked
  • 1 Bunch Asparagus
  • 1 Lemon
  • 2 Sprigs Rosemary, Optional

📝Instructions:

♨️ Preheat 425°F

Allow Steaks to come to room temp

Trim ends and wash Asparagus, place in baking dish or sheet pan

🧂Prepare: 

Toss asparagus with 1 tbsp olive oil, a dash of garlic salt, onion powder, & black pepper.  Begin roasting now in your preheated oven.

Season steaks generously on all sides with garlic salt, onion powder, black pepper.

Heat 2 tbsp olive oil in oven safe skillet to high heat.

Sear steak on first side for 3-4 minutes until brown crust is formed.

Flip to 2nd side and add the butter to pan, also add rosemary sprigs if using.

Allow butter to melt and baste steaks with the melted butter. Continue searing for 3-4 minutes on 2nd side.

🔥Bake steaks, Finish Asparagus:

Check the asparagus for doneness. If you are using very skinny stalks as shown in the recipe image, you will likely need to remove them now, if they are larger thicker stalks, continue cooking for the remaining 8 to 15 minutes until softened and some nice bits of brown and char form.

Add steak to oven and finish cooking for the following times, depending on the size of the steak and your preferred temperature. I always cook to medium, good filets will still melt in your mouth even when cooked through. 😍

  • 6 to 8 Oz steaks:  8 min-mid rare, 10 min-medium, 12 min-well done
  • 10-12 Oz steaks: 10min-mid rare, 12 min-medium, 15 min-well done

**Now is the perfect time to start a 2nd side dish like mashed potatoes or mac n’ cheese.  You will have about 20 minutes to prepare and finish it along with the steak & asparagus during their bake & rest time. Once Cook time is complete, rest steak for the full 10 minutes!

You MUST let them rest, this provides important carryover cooking and juices to redistribute and settle. You don’t want to waste all that juice and flavor all over your plate by cutting into them too soon and you want that perfect cook temperature to be met.

Finish the Asparagus by squeezing half a lemon over top and giving them a good final toss.

Finish any side dish you’ve started to accompany the meal during this final 10 minute rest time.

🍽️ Serve hot immediately following rest time.  

These babies are always great with add-on’s like gravy, sauteed onions and mushrooms, boursin cheese, or blue cheese crumbles on top. Add your favorite steak toppings & enjoy your perfectly cooked steak and luxurious delicious meal! ❤️

  1. Prep ingredients:

  1. Prepare and Sear:
    • Toss asparagus w/ 1 tbsp olive oil, a dash of garlic salt, onion powder, & black pepper.
    • Begin roasting asparagus in 425° oven
    • Season steaks generously on all sides w/ garlic salt, onion powder, black pepper
    • Heat 2 tbsp olive oil in oven safe skillet to high heat
    • Sear steak on first side 3-4 minutes until brown crust is formed
    • Flip to 2nd side & add the butter to pan, add rosemary sprigs if using
    • Allow butter to melt & baste steaks with melted butter. Sear 3-4 minutes on 2nd side
  1. Bake Steaks, Finish Asparagus:
    • Check asparagus, pending their size you will either need to remove now if done, or continue to bake with steak for remaining time  
    • Add steak to oven & finish for 8 to 15 minutes, *See times for size and temp in notes 
    • Remove all from oven and Rest Steak for full 10 minutes
  1. Finish and Serve:

    Squeeze 1/2 a lemon over top the asparagus and toss lightly

    After a full rest of steaks, serve immediately with asparagus and additional sides prepared

STEAK BAKING TIMES:

  • 6 to 8 ounce filets: 8 minutes-mid rare, 10 minutes-medium, 12 minutes-well done
  • 10 to 12 ounce filets: 10 minutes-mid rare, 12 minutes-medium, 15 minutes-well done

Additional Sides: Once you've added the steaks to the oven, this is the perfect time to start a side like mashed potatoes, rice, pasta, or mac n cheese.
