Instructions

  1. In 3-quart saucepan over medium heat, cook bacon until crisp, about 5 minutes; remove to paper towels.
  2. In drippings remaining in saucepan over medium heat, cook celery and onions until softened, about 5 minutes. Stir in flour; cook 1 minute.
  3. Add potatoes, clams with their liquid and 1 cup half&half (or half heavy cream half milk).
  4. Over high heat, mix and bring to a boil then reduce heat to low; simmer 10-15 minutes to blend flavors and until potato is fork tender. Season with salt and pepper to taste.
  5. Garnish with bacon and shredded cheese.
  6. *alternatively for a short cut if using microwaved bacon strips, use 2 tbsp butter in the first step to saute' the celery and onions before adding the flour.
